Nick Beardshaw has worked in hospitality since the young age of 11, starting his career as a humble patio-sweeper at his local pub. He wasn’t on sweeping duties for long, though.
He racked up stints at the prestigious Castle Hotel in Taunton and Daniel Clifford’s double Michelin-starred restaurant Midsummer House before moving to the Hand & Flowers in 2010 where he cemented his place as one of the country’s most talented chefs.
His inspiration comes from the ingredients brought into the pub by his suppliers, as well as through his long working history with Tom Kerridge.
Though he doesn’t overpresent his food, the chef is skillful in flavour presentation. Each ingredient, which are used in clever ways, shines through in every dish.
Whether it’s a mellow meaty chilli or a light crab parfait, Beardshaw works his ingredients hard.
