The Clifton in Bristol has a new lease of life after being purchased by Sarah and Tom Watts-Jones, owners of two successful gastro pubs in Wales - Heathcock in Cardiff and the Hare & Hounds in Aberthin.

The pub opened in July 2023 and within a matter of months was a new entry in the latest Michelin Guide.

The gastropub offers a daily changing, seasonal menu in its dining rooms. Its head chef Cory was the Sous Chef at the Hare & Hounds who offers his own style at The Clifton.

A custom-made Parrilla Grill means dishes are cooked over fire, with a big focus on sharing and feasting dishes. Everything is made from scratch in the kitchen, from its own sourdough bread and cultured butter, to fresh pasta.

As with the other pubs in the group seasonality is at the heart of its ethos. The aim is to build strong relationships with artisan suppliers in the surrounding Bristol area, as well as using produce from its own smallholding.
