Dishes you can expect to see on the menu include: Cullen skink, smoked haddock with leeks, potato and cream; pan seared scallops, pea veloutè with pea shoots and crispy smoked pork crumb; and beetroot cured gravlax with hot smoked salmon, cucumber two ways, dill, crème fraîche and crisp bread to start.
For mains, dishes could include: homemade Scotch Beef burger on a toasted briôche bun with mayonnaise, tomato, skinny fires and pickle; slow braised ox cheek with roast carrot and ginger purée, heritage carrot, mashed potato, bitter onion, kale and jus; and truffled macaroni with strong white cheddar, clava brie glaze, served with skinny fries and a house salad.
For those with a sweet tooth, expect desserts the likes of: dark chocolate brownie with blood orange gel, chocolate soil, orange pastille and marmalade ice cream; cream rice pudding with forced rhubarb; and stick toffee pudding with brandy caramel sauce.
